Traditional pork rinds have been a favorite in the South for many years. They are a puffed pork skin that is cooked in very hot oil and are lite and crunchy. A serving contains 70 calories and is about 2 cups of pork rinds with less than 1% carbohydrates. When crushed they become an excellent low carb "breading" for meats and other dishes.
